Nothing Bundt Cakes

26 Mar

It almost seems hypocritical to make this post after my weight watchers post.  But I love this recipe.  If you have not tried the cakes from “Nothing Bundt Cakes” you are really missing out on a treat.    They are the most amazing, moist cakes I have ever tried. They are also very pricey.  I have used these often for gifts but always hated paying that much for a cake.  Then I found this recipe and it really tastes almost identical to the real thing.  I love this cake.  I have used it since for gifts or when I am asked to bring a dessert. It is always such a hit.  I love to decorate the top with some flowers and put it in a nice cake box  (you can get these at Hobby Lobby or Orsen and Gygi).

INGREDIENTS
1 PKG DEVILS FOOD CAKE MIX
1 PKG INSTANT CHOCOLATE PUDDING
1 CUP SOUR CREAM
4 LARGE EGGS
1/2 CUP WATER
1/2 CUP OIL
1 1/2 CUPS MINI CHOCOLATE CHIPS
2 8 OUNCE CREAM CHEESE
1/2 CUP BUTTER, SOFTENED

DIRECTIONS
MIX FIRST SIX INGREDIENTS TOGETHER WITH A BEATER.  ADD CHOCOLATE CHIPS. POUR INTO A GREASED BUNDT CAKE PAN.  COOK IN 3350 DEGREE OVEN FOR 45-50 MINUTES.  LET COOL FOR 20 MINS.  REMOVE FROM PAN.
(IT IS REALLY BETTER TO COVER WITH SARAN WRAP, AND LET IT SIT OVERNIGHT IN THE FRIDGE BEFORE FROSTING AND SERVING).  IN A MEDIUM BOWL, CREAM TOGETHER THE CREAM CHEESE AND BUTTER UNTIL CREAMY.  MIX IN THE VANILLA, THEN GRADUALLY STIR IN THE POWDERED SUGAR ( START WITH 2 CUPS THEN KEEP ADDING MORE UNTIL IT IS NICE AND THICK.  FROST ACCORDING TO THE PICTURE.
3-4 CUPS POWDERED SUGAR
2 TSP VANILLA
