I saw this cobbler on Pioneer Woman’s cooking show and had to try it. Like anything else she does, it contains butter, but not her usual 1 pound per recipe, so I considered this a low fat recipe. Couldn’t quite make myself post it in the weight watchers catagory. Speaking of weight watchers–that cataogory has been extremely neglected. I will make sure to post something this week.
1 stick of butter
1 1/4 cups sugar
1 cup self rising flour*
1 cup of milk
2 cups fresh or frozen blackberries
Preheat oven to 350 degrees. Grease the botton of a 3 quart baking dish with butter.
Melt the butter. In a mixing bowl combine the flour, 1 cup sugar and the milk. Add the melted butter. Pour into the baking dish. Sprinkle the blackberries on top of the batter. Sprinkle the remaining 1/4 cup sugar on top of the blackberries.
Bake for 1 hour or until golden brown on top. When 10 minutes of cooking time remain, sprinkle a little sugar on top. Serve warm with whipped cream or vanilla ice cream or both. Why not you’ve come this far.
The blackberries can be replaced by blueberries, peaches or raspberries. They can be fresh or frozen, so there is not a time of year that you cannot whip up this wonderfully simple but divine dessert.
*if you do not have self rising flour, add 1 tsp of baking powder and 1/2 tsp salt
