If you haven’t read my previous posts, I will catch you up a bit. Mom loves crockpot meals. I usually cook 1-2 times a month and fill her freezer with assorted meals. I try to make a good variety and try out different recipes each month. I put them in a ziplock bag labeled with the instructions. Attached to the baggie is another card with instructions for anything that needs to be done at end of cooking and also what to serve it with. Each morning she takes one of these out of her freezer, puts a crockpot liner in the crockpot and dumps a meal in. I make the meals large enough to feed two ( her and the CNA that comes in the evening) but not big enough that she has alot of leftovers. I then try to stock the things that she will need for each of the meals for the month. I have found that the individual rice and pasta packets work great for this. The rice is just warmed in the micrOwave and works well with alot of the meals. Once dinner is over, they just throw away the liner and no need to even wash the crockpot. Works great. I am adding a few of her favorites. This would be a great idea for mothers with young kids, working mothers or anyone that would like to get all of the prep for the month done in one day.
CROCKPOT SWISS STEAK
2 Lbs boneless beef round steak, cut into 6 serving pieces
1.1 oz pkg beefy onion soup mix
3 cups onion sliced
28 oz. can diced tomatoes
3 TB. all purpose flour
1 cup water
Arrange steak in crockpot. Sprinkle soup mix over steak. Arrange onion slices all around. Top with tomatoes. cover and cook on low for 8 hours. Remove the steak and vegetables. Mix the flour and water together and add to slow cooker and stir until thickened. Spoon gravy over steak.
Or you can do it like I do and add all of the ingredients to a large freezer ziplock bag. Freeze until ready to cook. cook on low 8 hours.
Good served over mashed potatoes.
