This is another one of those “not really a recipe” posts. I had an omelette bar for the super bowl. I make up bowls of all the ingredients and then let everyone pick their fixings. Since it ended up being just Dave, Jordan and I for the first half, I had a lot of stuff left over. I hated to waste it so I decided to make mini-omelettes in muffin tins. I thought they would be great for busy mornings when we are all trying to get out the door. I had used ham, cheese, onions, spinach and tomatoes. I just put a handful of the toppings in each muffin tin and then poured the beaten eggs over top. I had used a combination of whole eggs and egg whites, but you can use all whole eggs, all egg whites or egg substitute. I added a little extra ham and cheese on top and baked them at 350 for about 30 minutes. They were perfect and only took a few seconds to warm up in the morning The only thing I would have done different was use some muffin liners as the tins were a little hard to clean with the cooked egg mixture. A great way to use up misc. items in your fridge.
